Gnocchi salad with pesto and butter dressing

Ingredients for 4 servings:

  • 500 g gnocchi (refrigerated section)
  • 1 ball of mozzarella
  • 1 tomato(s)
  • 3 slices of cooked ham
  • 2 spring onions
  • some basil
  • 5 tbsp buttermilk
  • ½ jar pesto
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 3 minutes; Total time approx. 2 hours 23 minutes

Cook the gnocchi in salted water according to the instructions. Drain and rinse briefly in cold water. Dice the mozzarella, tomato, and cooked ham, finely slice the spring onions, and finely strip the basil leaves. Combine the buttermilk and pesto. Combine everything in a bowl and mix. Season with salt and pepper, if desired. Let stand for 1-2 hours. Serve as a side dish for a barbecue or as a main course on hot days.
