Gnocchi with pumpkin, spinach and goat's cheese

Ingredients for 2 servings:

  • 450 g pumpkin(s), cut into cubes
  • 2 garlic cloves, chopped
  • 2 tbsp olive oil
  • 500 g gnocchi
  • 200 g spinach, frozen
  • 150 g goat’s cheese
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Preheat oven to 220°C. Mix the pumpkin cubes and garlic with olive oil, season, and spread on a baking sheet. Bake for 20 minutes, until the cubes are browned, shaking occasionally. Meanwhile, cook the gnocchi according to the package instructions. Defrost the spinach in a pan with a little oil and water and season. Remove the pumpkin and add it to the pan with the cooked gnocchi and spinach. Chop the goat cheese and add it. Mix everything briefly and serve hot.
