Ingredients for 4 servings:

  • 6 eggs, hard-boiled
  • 4 tbsp oil, neutral
  • 3 tbsp white wine vinegar
  • 1 tsp mustard
  • 1 small onion(s), finely diced
  • 1 tbsp parsley, finely chopped
  • 1 tbsp chives, cut into fine rolls
  • 1 pinch(s) of sugar
  • salt and pepper
  • 1 shot of Maggi

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 7 minutes; Total time approx. 32 minutes

Peel the hard-boiled eggs and blend the yolks with the oil, vinegar, and mustard using a hand blender until a creamy sauce forms. Now, using the kitchen fairy, stir in the onion, sugar, spices, and a little wine into this cream. Chop the egg whites into small pieces and fold in. Finally, sprinkle the fresh herbs over the top.
