Ingredients for 8 servings:
- 2 kg potatoes
- 4 eggs, hard-boiled
- 2 onions
- 250 g meat sausage (ham sausage, Lyoner)
- 250 g meat salad
- 4 rollmops or Bismarck herring from the jar
- 8 gherkins
- 2 tbsp mustard, medium hot
- some vinegar, wine-spiced
- some salt and pepper
- some water
- some cucumber juice and marinade from the fish
Instructions
Working time approx. 30 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 10 minutes; Total time approx. 4 hours 40 minutes
our traditional Christmas salad, with sausages or simply plain with baguette.
Boil and peel the potatoes. Chop the onions, eggs, sausage, fish, and pickles one after the other and place them in a large bowl. Add the meat salad, mustard, and a little of the cucumber and fish stock. Cut the potatoes into the bowl. Mix everything well, adding a little water if necessary. Season with salt, pepper, and vinegar. Please note: the salad needs to sit for a few hours to develop its full flavor. Therefore, taste and adjust the seasoning frequently, adding salt and vinegar, and if necessary, a little more mustard, cucumber, and fish stock.
