Grandma's red cabbage

Ingredients for 6 servings:

  • 100 g lard or goose fat
  • 1 m.-sized onion(s)
  • 1 small head of red cabbage
  • 4 cloves
  • 1 bay leaf
  • 2 m.-sized apples
  • 150 ml vinegar
  • some sugar
  • 250 ml water

Place the lard in a large pot and let it melt. Roughly dice the onion and sauté it in the lard. Meanwhile, first cut the red cabbage into quarters and then finely chop. Add it to the pot. Season generously with salt and pepper, the bay leaf, and the cloves, and add about 1/4 liter of water and the vinegar. Dice the apples and add them to the red cabbage. Reduce the heat and simmer gently for about two hours, stirring occasionally. At the end of the cooking time, season again with salt, pepper, and sugar. It’s best to put the bay leaves and cloves in a tea strainer—this saves you the trouble of searching for them later. The red cabbage tastes even better reheated.
