Grandma's strawberry syrup

Ingredients for 4 servings:

  • 1,200 g strawberries, well ripened, dark red
  • 600 ml water
  • 700 g granulated sugar
  • 30 g citric acid
  • 1 packet of vanilla sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 15 minutes; Total time approx. 8 hours 35 minutes

Wash and hull the strawberries, then quarter them and place them in a saucepan. Pour in the water and boil on high for about 14 minutes, stirring frequently. Then remove from the heat and set aside until it has cooled completely. Mix the granulated sugar with the vanilla sugar and add it to the strawberry mixture along with the citric acid. Cover with a glass lid and refrigerate overnight. The next morning, filter through a sieve and collect the syrup. Boil this for another three minutes on high heat and immediately pour into sterile bottles. Store in a cool, dark place. A great summer drink to serve with a splash of mineral water and a slice of lemon. Tip: Also perfect with wild berries, blueberries, and raspberries. With gooseberries, use a little more sugar and less citric acid, as otherwise it will be too acidic. Vanillin sugar can be added, but it is not necessary and depends on taste. We loved it.
