Gratinated kohlrabi

Ingredients for 2 servings:

  • 150 ml cream
  • 150 ml vegetable stock
  • 2 kohlrabi
  • ½ tsp herbal salt
  • 1 pinch of white pepper
  • 1 pinch of nutmeg, freshly grated
  • 100 g cooked ham
  • 2 stalks of lovage
  • 1 tsp cornstarch to bind
  • 20 ml water, cold
  • 50 g grated cheese, e.g. Gouda

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel the kohlrabi, halve it, and slice it; it’s fine to use a bit thicker. Bring the vegetable stock and cream to a boil in a saucepan, season with herb salt. Add the kohlrabi to the cream mixture and cook for about 15 minutes. Cut the ham into strips, wash the lovage, pat it dry, and finely chop it. Set aside 1 tablespoon for garnish. Preheat the oven grill to 220°C (425°F) or 200°C (400°F) fan-assisted. For the sauce, mix the cornstarch with the cold water in a small bowl and stir into the hot sauce. Simmer for about 1 minute. Season with herb salt, pepper, and nutmeg. Stir in the ham and herbs. Place the kohlrabi, sauce, and ham in a baking dish, sprinkle with grated cheese, and gratinate under the oven grill for 5-6 minutes (or 10 minutes with fan-assisted oven). Serve the gratinated kohlrabi garnished with lovage. Serve with boiled potatoes. Tip: If you don’t like the intense taste of lovage, you can use chervil.
