Greek beef soup – Kreatosoupa

Ingredients for 4 servings:

  • 100 g rice noodles (orzo)
  • 600 g beef
  • 1 can of tomatoes, chopped
  • ½ celeriac
  • 4 carrots
  • 2 onions
  • 6 potatoes
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 ½ liters vegetable broth
  • some salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 20 minutes; Total time approx. 1 hour 40 minutes

Pat the beef dry and cut into large cubes. Clean the celery and cut into large pieces. Peel the carrots and also cut into large pieces. Peel the onions and also cut into large pieces. Peel the potatoes and also cut into large pieces. Brown the beef in a large pot in 2 tablespoons of olive oil on all sides for several minutes. Then deglaze with the stock and bring to a boil. Simmer over medium heat for about 40 minutes, occasionally skimming off the egg whites with a slotted spoon. Now add the chopped tomatoes and all the vegetables and simmer for about 20 minutes. Then add the orzo and let it simmer for another 10 minutes. Season the soup with salt and pepper and a squeeze of lemon juice. It is best served with just some pita bread. Kreatosoupa is a popular soup in Greece on cold winter days.
