Ingredients for 2 servings:

  • 300 g leaf spinach
  • 1 small onion(s)
  • 1 clove(s) garlic
  • 150 g rice
  • 1 cube of stock
  • 350 ml water
  • 1 cup crème fraîche
  • 1 package of feta cheese
  • oil
  • salt and pepper

Peel and finely dice the onion and garlic, thaw the frozen spinach, e.g. in the microwave. Heat the oil and sauté the diced onion and garlic, add the spinach and sauté for 10 minutes. Then sprinkle in the rice and pour in the water. Now add the stock cube and dissolve it. Then add the crème fraîche, a little salt and pepper and sauté until the rice is half cooked. Dice half of the feta cheese and fold it into the mixture. Now transfer everything to a baking dish. Arrange the remaining sliced ​​feta on top and bake at 200 degrees Celsius for about 35 minutes (until the rice is soft enough). If the cheese starts to get too brown, cover the dish.
