Greek spinach rice

Ingredients for 4 servings:

  • 750 g spinach
  • 2 onions, chopped
  • 1 cup rice
  • 6 tbsp olive oil
  • salt and pepper
  • 2 tbsp dill, finely chopped
  • 2 tbsp parsley, finely chopped
  • ½ lemon(s), juice
  • possibly sugar
  • possibly tomato paste

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Fry the onions in 4 tablespoons of olive oil until translucent. Add the trimmed and washed spinach to the onions and let it wilt. Season with salt and pepper and add the herbs. Add the rice and pour in the remaining olive oil and 1 1/2 cups of water. Cook over low heat in a covered pan for 20 minutes. Stir frequently to prevent sticking. Serve with lemon juice. Tip: Children will especially enjoy this dish if you add a pinch of sugar and 2 teaspoons of tomato paste. Dissolve the tomato paste in a little water and stir it in after you’ve added the rice to the spinach.
