Green asparagus in tomato sauce

Ingredients for 2 servings:

  • 500 g asparagus, green
  • 2 can/n tomatoes (Pizza tomatoes)
  • 4 cloves garlic
  • salt and pepper
  • oregano
  • basil
  • 250 ml red wine

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Heat olive oil in a large pan and lightly fry the finely chopped garlic. Add the pizza tomatoes and bring to a boil. Season with pepper, salt, oregano, and basil, and add the wine. Simmer on low heat for about 20 minutes. Meanwhile, cook the green (cleaned) asparagus in a little salted water for 15 minutes, remove from the heat, and cut each spear into approximately three equal pieces. Add to the sauce, stir once, and serve. Any type of pasta works well as a side dish; I always serve it with tagliatelle.
