Green asparagus with tomatoes topped with bread and cheese

Ingredients for 2 servings:

  • 1 bunch of green asparagus
  • 1 tbsp oil, approx.
  • 1 clove(s) garlic
  • some salt and pepper, freshly ground
  • 125 g tomatoes, approx.
  • 1 tbsp balsamic vinegar
  • 1 slice(s) of toast
  • 50 g cheese, grated, approx.
  • 1 handful of basil leaves

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Wash the asparagus, peel the lower part, and trim off the tough end. Roughly dice the tomatoes and thinly slice the garlic clove. Finely dice the toast and finely chop the basil leaves. Preheat the oven to 200°C (top/bottom heat). Brush the asparagus with oil in a shallow baking dish, season with salt and pepper, and spread them out side by side. Distribute the garlic between the asparagus spears and top with the tomatoes. Bake for about 15 minutes, turning once. Meanwhile, mix the cheese, basil, and toast cubes. Drizzle 1 tablespoon of balsamic vinegar over the asparagus, spread the cheese mixture on top, and continue baking for about 10 minutes.
