Green beans in curry sauce

Ingredients for 4 servings:

  • 1 kg beans
  • 1 large onion(s)
  • 2 tbsp tomato paste
  • 2 tbsp curry powder
  • 1 tsp savory
  • 200 ml water
  • olive oil
  • salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 5 minutes

Wash and trim the beans and cut into bite-sized pieces. Finely slice the onion. Place the onion in a large pot and sauté in a little olive oil until translucent. Add the curry powder and roast for about 3 minutes, stirring constantly to prevent burning. Add the trimmed beans and sauté briefly. Heat the water in a kettle, but do not bring to a boil. Add the tomato paste to the pot, stir well, and also lightly roast. Pour in the water. Stir in the savory and season with salt and pepper. Simmer with the lid closed for 20-30 minutes on low heat, until the beans are tender but still have a little bite. Season with salt, pepper, and curry powder to taste. Serve with rice and natural yogurt.
