Green beans with pasta and mushroom and goat cheese sauce

Ingredients for 4 servings:

  • 500 g green beans
  • 250 g pasta
  • 2 shallots
  • 2 tbsp olive oil
  • 40 g butter
  • 500 g mushrooms, brown
  • 125 ml white wine
  • 100 ml cream
  • 125 g goat’s cheese
  • 1 sprig(s) of thyme

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Wash the green beans. Trim the ends and quarter them. Add them to boiling, salted water and cook for 15 minutes. Cook the pasta according to the package instructions. Tip: The pasta can also be cooked in the pot with the boiling beans. Simply add the pasta when the remaining cooking time is the same as the pasta cooking time. Finely dice the shallots and cook in a pan with olive oil over medium heat until translucent. Then increase the heat to high, add the butter, and add the sliced ​​or chopped mushrooms. Sauté over high heat for 1 to 2 minutes, turning frequently, then reduce the heat and deglaze with the white wine. Add the cream and continue to simmer gently in the uncovered pan for 5 minutes. Stir in the goat’s cheese and season to taste with salt and the torn thyme leaves.
