Green beans with potatoes

Ingredients for 3 servings:

  • 500 g beans, green, frozen
  • 5 m.-sized potatoes
  • 1 large onion(s)
  • 3 garlic cloves
  • 3 tbsp tomato paste
  • 4 tbsp olive oil
  • 450 ml vegetable stock
  • salt and pepper
  • Harissa

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

First, cook the potatoes in their skins, peel, and dice them. Dice the onion and garlic, then sauté them in the oil. Add the tomato paste and mix well. Deglaze with the stock and bring to a boil. Stir in the still-frozen beans and simmer over medium heat for about 15 minutes. The cooking time depends on your taste (I prefer firm vegetables). Finally, season the dish generously with salt, pepper, and harissa. Stir in the diced potatoes to heat through. Do not cook.
