Green beans with tomatoes

Ingredients for 4 servings:

  • 5 tomatoes
  • 1 piece(s) ginger (approx. 3 cm), fresh
  • 1 garlic clove(s)
  • 500 g beans, green
  • Water (salt water)
  • 2 tbsp ghee
  • 1 tsp turmeric
  • ½ tsp cayenne pepper
  • 1 tsp coriander
  • 125 ml vegetable stock

Indian recipe

Blanch the tomatoes in boiling water, then peel, deseed, and finely dice. Peel and grate the ginger. Peel the garlic. Blanch the beans in boiling salted water for 3 minutes, then refresh and drain. Heat the ghee. Sauté the ginger, garlic, turmeric, cayenne pepper, and coriander for about 1 minute, then press in the garlic. Add the tomatoes and stir until evenly coated. Pour in the vegetable stock and cook for about 10 minutes, until the sauce thickens slightly. Stir occasionally. Add the beans and cook over low heat for 5 minutes, stirring occasionally.
