Ingredients for 4 servings:

  • 250 g minced meat
  • oil
  • 30 g butter
  • 60 g white bread
  • 500 g flour
  • 4 eggs
  • 2 tsp salt
  • ½ tsp pepper
  • some nutmeg
  • 250 ml water
  • 3 bunches of parsley
  • 1 ½ liters of meat broth or vegetable broth

Spätzle dough with minced meat

Fry the minced meat in oil until crumbly and let cool. Cut the white bread or toast into cubes and fry in butter in a hot pan for about 5 minutes until crispy, then let cool. To make the spaetzle dough, mix together the flour, eggs, salt, pepper, nutmeg, and water. Mix the bread cubes, minced meat, and finely chopped parsley into the spaetzle dough. Use a moist tablespoon to scoop out knobs and bring them to a boil in vegetable or meat broth. Let the knobs stand for another 5 minutes. For the spaetzle dough, you can also replace 250 ml of water with 5 eggs. With 500 g of flour, I get about 32 knobs for 4 people. The knobs are delicious as a garnish in meat broth and, of course, with a cream, cheese, or mushroom sauce. Or cut into small pieces, fried crispy in a pan and topped with eggs and served with a leaf salad.
