Green Prosecco Soup

Ingredients for 4 servings:

  • 1 small onion(s), diced
  • 500 g peas, frozen
  • 1 liter broth, clear
  • e.g. Prosecco
  • 8 scampi
  • n. B. Salt
  • possibly herb butter

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Sauté the onion until translucent, pour in the stock, bring to a boil, and add the peas. Once the peas are tender, purée the soup and season with salt. Thread the scampi onto four skewers and fry in a non-stick pan. Season with salt and toss in herb butter (if using). While the soup is no longer boiling, add the Prosecco and serve immediately. Serve the soup in a glass and place the scampi skewer on top.
