Grilled Cutlet With Spicy Salsa And Beans And Chanterelle Vegetables

A unique combination of juicy chops and crunchy vegetables

Ingredients for 4 persons

For the salsa:

  • 1 chili pepper, fresh
  • 1 clove of garlic
  • 1 shallot
  • 3 tomatoes
  • 2 tbsp chopped parsley
  • 2 tbsp chopped basil
  • Salt pepper
  • 1 pinch of sugar
  • 4 tbsp olive oil

For the chops and beans and chanterelle vegetables:

  • 4 chops
  • 400g green beans
  • 1 shallot, diced
  • 5 tbsp butter
  • 50g diced ham
  • 1 tbsp savory, chopped
  • 250g fresh chanterelles
  • 2 tbsp hazelnut oil
  • Salt pepper

For the salsa

  1. Halve the chili lengthwise and remove the core with the help of an espresso spoon (for more spiciness, fold the core into the mixture). Finely dice the chili, garlic, shallot, and tomato. Mix all ingredients.
  2. Stir the chopped parsley, basil, salt, pepper, sugar, and olive oil into the cubes – mix everything together and leave to stand for at least 20 minutes.
