Gülsum's Bulgur

Ingredients for 6 servings:

  • 400 g Bulgur, fine (Köftelik Bulgur)
  • 3 tbsp paprika paste, hot
  • 1 tube(s) Tomato paste
  • 3 tbsp oil, neutral
  • 3 tbsp olive oil
  • 4 tbsp Balsamic vinegar (pomegranate balsamic), alternatively lemon juice
  • 1 bunch of spring onions
  • 1 bunch parsley, flat
  • some salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Place the bulgur in a bowl and pour over a little boiling water. It should be dry, not too runny. Add salt, mix, and let it swell. Add the paprika and tomato paste and knead well, preferably with your hands. Add the oil and pomegranate balsamic vinegar and continue kneading. Wash and finely chop the spring onions and flat-leaf parsley, and stir in. Season with salt and pepper.
