Gyros with Metaxa sauce

Ingredients for 3 servings:

  • 450 g pork (neck)
  • 1 can of tomato paste
  • ½ onion(s)
  • 250 g mushrooms, fresh
  • 2 bell peppers, red
  • 1 cup sour cream
  • ½ cup cream
  • 5 cl Metaxa or Chantre
  • 2 garlic cloves
  • 150 g cheese
  • salt and pepper
  • Paprika powder
  • Sugar
  • oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Preheat the oven to 180°C fan/convection oven. Cut the meat into strips and marinate in a mixture of salt, pepper, paprika, and oil. Meanwhile, clean the bell pepper, mushrooms, and onion and cut into small cubes. Sear the meat in a very hot pan. Then transfer it to a baking dish and cover with aluminum foil to keep it moist. Next, sear the diced onion, mushrooms, and bell pepper in the same pan. The roasted flavors from the meat should permeate the sauce. Once the vegetables are browned, add the tomato paste. Now add Metaxa or Chantre and simmer briefly. Finally, add the sour cream and cream to the sauce. Pour the sauce over the meat and sprinkle everything with cheese. Place the baking dish in the hot oven and bake for about 10-15 minutes, until the cheese has reached the desired degree of browning.
