Halmonies glass noodle salad

Ingredients for 4 servings:

  • 200 g glass noodles
  • 1 tbsp soy sauce
  • 100 g pork, cut into strips
  • 1 can pineapple, sugared pieces
  • 3 half bell peppers, red, yellow and green, cut into strips
  • 1 medium-sized onion(s), cut into strips
  • salt and pepper
  • some morels, cut into strips
  • some sesame seeds, roasted
  • 200 g rice (round grain)
  • 1 tbsp oil

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Prepare the glass noodles as directed on the package. Heat oil in a pan. Fry the pork until golden brown, season with salt and pepper, and then remove from the pan. In the remaining oil, fry the bell peppers, onions, and morels; they should still have a bite but be no longer raw. Mix the glass noodles with the meat, vegetables, and pineapple, season with soy sauce, salt, and pepper, and let stand at room temperature for about 2 hours. Then prepare the rice. Mix the cold noodle salad with sesame seeds and serve with the hot rice. Note: You can also use turkey instead of pork. If the salad isn’t eaten right away, it can be kept in the refrigerator for up to 3 days.
