Hearth-fire vegetable soup

Ingredients for 6 servings:

  • 2 tbsp butter
  • 2 garlic cloves
  • 2 stalk(s) leeks
  • 3 large carrots
  • 300 g butternut squash, peeled
  • ½ tsp salt
  • ½ tsp dill, dried
  • ½ tsp pepper
  • 800 g tomatoes, chopped
  • 150 g soup noodles
  • 1 liter vegetable broth
  • 500 ml water
  • a few stalks of parsley
  • ½ tsp cumin powder, to taste
  • ½ tsp curry powder, to taste

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

warming vegetable soup inspired by “Skyrim”

Finely chop the garlic cloves, using the white and light green parts of the leeks, which are roughly chopped. Dice the carrots and chop the squash into small pieces. Melt the butter in a large pot over medium heat, add the garlic and leeks, and sauté until both are soft, about 5-10 minutes. Add the carrots and gently mash them a little, then stir to coat everything with the butter. Then add the spices, tomatoes, soup noodles, vegetable stock, and water to the pot. Simmer the soup for about 45 minutes. Stir in the chopped parsley just before serving. This recipe makes a lovely, warming vegetable soup. You can also use pearl barley instead of soup noodles. If you prefer the soup a little thicker, feel free to use less water and more noodles.
