Hearty onion soup

Ingredients for 4 servings:

  • 500 g onion(s)
  • 50 g butter
  • 400 g sausage (smoked Rhenish Mettwurst
  • 500 g potatoes
  • Salt and pepper, freshly ground
  • 200 g bacon, streaky
  • 1 liter of water
  • Vinegar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the onions, slice them, and fry them in hot butter until translucent. Pour in the water, add the whole Mettwurst, and simmer over low heat for 15 to 20 minutes. Peel and quarter the potatoes, then cook them in a second pot of salted water until soft, then drain, mash, and add to the onion soup. Stir well. Dice the bacon, fry it in a pan, and add it to the soup. Season with salt, plenty of pepper, and a dash of vinegar. Finally, remove the sausage, slice it, and return it to the soup. Serve the onion soup very hot.
