when things have to go quickly

First, finely dice the onions. Fry them in a hot pan with the bacon until the onions are lightly browned. Then remove from the heat and let cool slightly. In the meantime, combine the dumpling batter, egg, and milk in a large bowl. Add the fried onion and bacon mixture to this mixture. Mix everything together with a wooden spoon and season with salt and pepper. Be very sparing with the salt. Sometimes salt isn’t necessary, as the bacon already contains enough salt. Now fry the finished batter in batches in a waffle iron until golden brown. Tips: Sour cream or tzatziki go well with the waffles. You can also sprinkle grated cheese over the finished waffles. The batter can also be modified with grated cheese or herbs. If you have more time, you can also make the dumpling batter from scratch. But if you’re in a hurry, I use ready-made batter from the refrigerated section.
