Heavenly light berry roll

Ingredients for 1 servings:

  • 4 eggs
  • 1 lemon(s), the juice
  • 125 g sugar
  • 125 g flour
  • 750 g raspberries or mixed berries, frozen
  • 6 sheets of gelatin
  • 500 g quark
  • Sugar or sweetener as desired
  • 1 cup cream or Cremefine for whipping
  • Strawberries, fresh or other seasonal berries

Thaw the fruit. Line a baking tray with baking paper and preheat the oven to 200°C (top/bottom heat). For the sponge cake, beat the eggs with the lemon juice until frothy. Gradually add the sugar and continue beating until the mixture is creamy. Sift the flour over the cake, fold it in, and spread the sponge cake on the prepared baking tray. Bake in the preheated oven for about 10-12 minutes. Immediately turn it out onto a tea towel dusted with sugar and, using the tea towel, loosely roll it up from the longer side. Allow to cool. Meanwhile, soften the gelatin for the cream according to the package instructions. Purée 250g of the berries, mix with the quark and a little sugar or sweetener. Dissolve the gelatin, remove from the heat, and stir in about 2 tablespoons of the berry-quark mixture. Then quickly stir the entire gelatin mixture into the berry mixture. Refrigerate until the mixture begins to set, then whip the cream until stiff peaks form and fold in. Remove about 1/3 of the cream and set aside. Drain the remaining berries well on kitchen paper and fold them into the remaining berry cream. Now unfold the cooled Swiss roll again and remove the baking paper. Spread the berry cream and whole berries on it and roll it up again using the cloth. Carefully place it on a cake plate. Spread the reserved berry cream all over the roll. Garnish with fresh berries. Important: If you want to use quark with 0.2% fat, you must first let it drain a little or pour off the liquid on the surface, otherwise the cream will be too runny. The calorie information refers to one roll made with 0.2% quark, sweetener, and Rama Cremefine whipping cream, and cut into 16 pieces.
