Herb and tomato casserole

Ingredients for 2 servings:

  • 250g spaghetti
  • salt water
  • 100 g lean bacon
  • 250 g tomatoes
  • 125 g cheese
  • 1 onion(s), chopped
  • 2 tbsp herbs, chopped
  • 125 ml cream
  • 2 eggs
  • salt and pepper
  • possibly paprika powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Cook the spaghetti in salted water until slightly tender. Fry the bacon in a pan, then sauté the diced onions in the bacon fat. Add the chopped herbs, mix everything with the spaghetti, and transfer to a baking dish. Peel the tomatoes, slice them into strips, and arrange them on top. Slice the cheese and arrange them on top. Mix together the cream, eggs, salt, and pepper—or paprika if desired—and transfer to the dish. Bake for 30 minutes at 220°C (425°F) fan-assisted oven.
