Homemade salad dressing

Ingredients for 4 servings:

  • 200 ml chicken broth or vegetable broth
  • 200 ml balsamic vinegar
  • 300 ml olive oil
  • 100 g honey
  • 100 g mustard
  • 2 shallots
  • 1 clove(s) garlic
  • Thyme
  • rosemary
  • salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Reduce the broth with shallots, garlic, rosemary, and thyme. Strain the broth through a sieve or cheesecloth. This removes any solids from the broth. Mix the honey, mustard, and balsamic vinegar with the broth. While the broth is still warm, it will dissolve nicely. Carefully, using a hand blender, stir in the olive oil in a thin stream until the mixture is smooth. Season the dressing with salt, pepper, thyme, and rosemary. The dressing can be used immediately or stored in the refrigerator until ready to use. It has the great property of being long-lasting and not settling.
