Ingredients for 4 servings:

  • ½ cube of yeast
  • 400 g wheat flour type 405
  • 1 tsp sugar
  • 1 tsp turmeric
  • 250 ml water, lukewarm
  • salt and pepper
  • 400 g minced beef
  • 100g chorizo
  • salt and pepper
  • 1 large onion(s)
  • 1 tbsp oil
  • 1 tbsp brown sugar
  • 2 tbsp tomato paste
  • 2 tbsp spirit vinegar
  • 150 ml water
  • 4 plums or prunes
  • 8 slices of breakfast bacon
  • 4 lettuce leaves

Instructions

Working time approx. 40 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 40 minutes

Dissolve the yeast in lukewarm, sweetened water. Knead the yeast water, flour, salt, pepper, and turmeric in a food processor until you have a smooth dough. Let it rise in a warm place for about 30 minutes. Remove the dough from the bowl, divide it into 4 equal pieces, and use a wooden spoon to make a hole in the center of each. Cover the buns and let them rise again in a warm place for about 15 minutes. Preheat the oven to 200 degrees Celsius (top/bottom heat) and bake the buns for about 30 minutes. Remove from the oven and let them cool. For the patties, cut the chorizo ​​into small pieces and mix with the ground beef, salt, and pepper. Knead the ground beef mixture thoroughly. Divide the mixture into 4 equal pieces and shape into patties. Let these rest in the refrigerator for about 30 minutes. For the sauce, peel the onion, halve it, and cut it into thin strips. Sauté in a pan with 1 tablespoon of oil until the onions are light brown. Add the brown sugar and allow to caramelize. Add the tomato paste and sauté briefly. Pour in the vinegar and water and reduce until a thick onion broth has formed. Heat a griddle or grill and fry the patties for about 5 minutes on each side. Add the bacon and fry until crispy. Pit and quarter the plums. At the end of the cooking time, fry them with the meat and bacon for about 2 minutes. Remove the meat, bacon, and plums from the grill or pan and keep warm. Cut the buns apart and grill briefly on the cut side. In the meantime, wash the lettuce leaves and pat dry. Cover the bottom of each bun with the lettuce leaf, place the patty on top, spoon the sauce over the meat, spread the bacon over it, and place the plums on top. Finish with the top of the bun.
