Honey – whiskey – herring (whiskey sill)

Ingredients for 4 servings:

  • 3 fish fillets (herring fillets, approx. 450 g)
  • 1 ½ dl water
  • 2 dl sugar
  • ½ onion(s), red
  • ½ carrot(s)
  • 5 grains of allspice, coarsely ground
  • 1 bay leaf
  • ¾ dl vinegar essence (12%)
  • 1 small onion(s), yellow
  • ½ dl honey, liquid
  • 5 cl whiskey, mild (preferably bourbon)
  • 25 grains allspice, whole
  • 7 star anise, whole or cloves
  • 15 peppercorns, black or white
  • 3 bay leaves

Working time approx. 20 minutes; Rest time approx. 2 days 12 hours; Total time approx. 2 days 12 hours 20 minutes

pickled herring

To make the pickled herring, heat the water and sugar together until the sugar has dissolved. Let cool. Rinse the herring fillets and pat dry. Peel and slice the onion and carrot, then place them in the sugar solution. Add a bay leaf, crushed allspice, and vinegar essence, and stir. Place the herring fillets in a sealable container and pour the vinegar solution over them. Refrigerate for 2 days. For the seasoning mix, peel and slice the yellow onion. Remove the herring from the vinegar solution (strain out the spices and reserve the liquid!), drain, and cut into pieces. Mix the honey and whiskey. Alternate layers of herring, onion slices, and spices in a preserving jar. Pour the whiskey-honey mixture over the herring. Fill with the pickling liquid until the herring is completely covered. Stir. Let it sit in the refrigerator for a few hours (preferably overnight) before serving.
