Ingredients for 4 servings:
- 120 g flour
- salt and pepper
- 1 egg(s), separated
- 150 ml wine, white, dry
- Olive oil, for frying
- 500 g beans, green, cleaned

Sift the flour into a bowl. Mix in the salt and pepper. Make a well in the center and add the egg yolk. Slowly pour the wine or water into the center and gradually mix it with the flour until a smooth batter forms. Let stand for 30-60 minutes. Beat the egg whites until stiff but not dry, then gently fold them into the batter. Half fill a saucepan or deep fryer with oil. Heat the oil to 180°C. Carefully coat the beans with batter and then fry in batches for 3-4 minutes until crisp and golden brown. Drain on kitchen paper and serve immediately.
