- 4 Carrots
- 2 Leek sticks
- 2 Onions
- 1 Red chilli pepper
- 3 Cloves of garlic fresh
- 0,5 liter Vegetable broth
- 0,25 liter Dry red wine
- 4 Allspice grains
- 4 Bay leaves
- 4 Juniper berries
- 0,5 teaspoon Jalapeño pepper
- Coarse salt to taste
- Wash the meat, cut it into nice pieces and pat dry well. Rub in the spices, peel the onion and garlic and roughly dice. Wash the leek and cut into rings. Core the chilli pepper and cut into rings. Peel the carrots and cut evenly Cut slices.
- Now sear the meat in small amounts in each pan fry the carrots, leek and onions, then add the stock and bring to the boil so that the roasted substances dissolve. When a pan is ready, transfer to a saucepan. Repeat until everything used up, add the remaining spices.
- Now bring the goulash to the boil and cook under a low flame until the liquid has evaporated a little, now pour red wine over and over again until the meat is soft (for me it was 45 min) Now season again and serve hot.
- We ate bread dumplings and red cabbage with it.
