Leaf salads are generally always prepared according to similar rules. The raw salad is cleaned, cut into bite-sized pieces, tossed with your choice of dressing and flavoring ingredients, and then served. However, some types of lettuce can also be prepared warmly. This includes chicory, radicchio, or romaine lettuce, all of which can also be steamed and cooked in other dishes.
A classic cold salad can be prepared from lettuce types such as lamb’s lettuce, lettuce, iceberg lettuce, or rocket. First, you remove withered leaves and brown spots. The lettuce should also always be carefully cleaned under running, lukewarm water before further processing to remove soil or insect dirt. On the other hand, you should never leave lettuce leaves in standing water: they can become limp and healthy nutrients are lost.
After cleaning, dry the lettuce well. Either this is done with a salad spinner or you dab the lettuce dry with a kitchen towel. Before preparation in the large salad bowl, the lettuce is divided into individual leaves or bite-sized pieces and any inedible stalks are removed. Finally, mix the lettuce with other ingredients in the salad bowl. Another idea: you layer the ingredients in a cake ring to make a salad cake. Depending on the salad variant, it can be meat, cheese, or a variety of other vegetables. It is important for all salads that the dressing is only added at the very end. Otherwise, the leaves will become soaked with liquid and will no longer be crisp. It is best to stir the dressing into the salad before it is placed on the table and eaten or serve it separately.
If you don’t just want to prepare salad cold, there are numerous variations to choose from, in which lettuce types can be grilled, stewed or fried. Chicory is good for sautéing in butter or even gratinating as part of a casserole. Radicchio can also be steamed – this type of salad also tastes good raw as a pizza topping. Romaine lettuce, on the other hand, can be prepared in a similar way to spinach by steaming it. Arugula tastes great as an ingredient on warm sandwiches and goes well with Italian pasta dishes or on pizza – try the recipe for arugula pizza! Even a classic leafy salad like lamb’s lettuce can be steamed and served as a side dish, this also applies to endive salad.
