There are a number of ways to keep wild garlic in the freezer. But before you start freezing, it is important to wash the wild garlic thoroughly. This is especially true for leaves you collect from the forest. These can be covered with the eggs of the fox tapeworm and must therefore be carefully rubbed off with your hands under running, hot water, and carefully cleaned. Once that’s done, nothing stands in the way of eating wild garlic without hesitation. Important: exert as little pressure as possible on the leaves, because wild garlic is very sensitive. I prefer to freeze the dried wild garlic whole. But you can also cut it up or mix it, fill it into ice cube trays and freeze it.
To preserve wild garlic, you can freeze whole leaves. All you have to do is put the washed and dried wild garlic in the desired quantity – loosely, not crushed – into airtight freezer containers or freezer bags and place it in the freezer – done!
What can you do with frozen wild garlic?
The frozen leaves can be used directly for cooking or frying and do not have to be thawed beforehand. If you want to make a pesto or spicy herb butter, defrost the required amount of wild garlic and then process it.
Can you also use the stalks of wild garlic?
You can consume both leaves and stalks without hesitation. However, for many recipes and also for preserving, you should remove the stems. However, this is not necessary for pesto or dishes in which the wild garlic is chopped up.
How to thaw wild garlic?
If I use frozen wild garlic to refine sauces, I simply add it to the pot when it is frozen. But if I process it further, for example, to make wild garlic bread or herb butter, then I let frozen wild garlic thaw at room temperature beforehand.
How can I store wild garlic?
Fresh wild garlic should therefore be consumed as soon as possible; it will only keep for a day or two if refrigerated. To store, wrap in damp kitchen paper and place in the vegetable compartment of the refrigerator. The spring herb can also be frozen, preferably in portions in freezer bags or as butter.
How long can you keep fresh wild garlic?
The aromatic wild garlic leaves taste best freshly picked. Unfortunately, they only last 1-2 days in the vegetable compartment of the refrigerator. To keep wild garlic longer, you can easily freeze it.
When is wild garlic no longer good?
The season ends when wild garlic blooms, around the beginning of May. It still grows afterward, but you shouldn’t harvest the weed anymore. Because when wild garlic has bloomed, it loses a lot of taste.
