The liver can be prepared in many ways and is, therefore, one of the most popular offal. Whether fried in a classic way, cooked in the oven, or grilled: you will always impress with this delicacy of veal, poultry, beef, and co. Because: liver scores with each of these methods thanks to short cooking times, a creamy texture, and an incomparable, finely tart aroma.

Prepare fried liver in the pan – here’s how

Before preparing liver, first note the proper preparation. And this is how you work step by step: Remove skin and blood vessels. Then wash the liver thoroughly. Next, you can resort to milk when preparing the liver. This step is particularly recommended for beef and pork liver. They contain a particularly large number of bitter substances, which are dissolved by briefly soaking them in milk. In the last step, coat the liver in flour. This keeps the tissue juicy while frying.

Berlin-style liver and more

For Berlin-style fried liver, heat butter in a pan and fry the liver for a few minutes on both sides. Also, add onion rings and apple wedges. Another traditional option is sour liver. With this southern German way of preparation, you serve the liver with sauce. It consists of tomato paste, red wine vinegar, and beef broth.

Another popular fried variant is liver slices. With this dish, you serve the innards on Schupfnudeln and sauerkraut.

By the way: We do not recommend preparing liver in the microwave. Preparation in the oven, on the other hand, guarantees a particularly tender result. Always fry the innards briefly in a pan beforehand. Only then put the liver in the oven for the rest of the cooking time. Your liver Berlin style and sour liver will taste even better!

Prepare grilled liver or make into a pie

Did you know that liver can also be grilled? To do this, first, place the liver in a marinade. White wine and olive oil, for example, as well as herbs such as rosemary and garlic, are suitable. Then grill the liver for just a few minutes using indirect heat in the edge area of ​​the device.

Enjoy liver chopped up with all sorts of spices such as laurel, thyme, and juniper as a creamy pie! If you are very hungry, Bavarian liver dumplings in meat broth are ideal, which you can serve with chives and parsley sprinkled with them.
