How to Make a Crispy Fried Chicken?

If you want to make a roast chicken, you should allow about two hours for the preparation. In addition to the chicken, you will need onions, garlic, clarified butter, salt, and pepper. Add paprika powder, curry – as in this chicken salad recipe – or fresh herbs to flavor the chicken, depending on your preference.

First, you need to prepare the chicken. Wash the roast chicken inside and out and pat dry thoroughly. If you haven’t already done so, trim off the wingtips and rump to keep them from burning in the oven. Strong poultry shears are suitable for both. Rub the inside of the chicken with salt and pepper and stuff with the parsley, quartered onions, and garlic cloves. Tie the chicken in shape with kitchen twine so that the wings and legs don’t brown too quickly. Preheat the oven. 140 degrees is enough for circulating air, for top and bottom heat you should preheat to 150 degrees.

Next, place the roast chicken, breast side up, on a deep baking sheet, and carefully coat the roast all over with some of the clarified butter and seasoning. Salt the outside of the prepared chicken again and cook on the second-lowest rack for 20 minutes. Then brush the chicken again with the spice mixture and increase the oven temperature to 180 degrees. The poultry will now cook for another 45 minutes. To get the skin nice and crispy, you should brush the roast chicken again with the seasoning butter about halfway through the cooking time.

After three-quarters of an hour, increase the temperature to 210 degrees one last time. After 10-15 minutes, turn off the oven and let the chicken sit for about 5-10 minutes before carving and serving.
