Ingredients for 1 servings:
- 2 large tomatoes (vine tomatoes)
- ½ cucumber(s) , (snake cucumber)
- 2 shallots
- 2 tbsp, heaped olives (Kalamata)
- 1 tbsp Balsamic vinegar, white
- 1 tbsp olive oil
- some parsley (parsley sprigs)
- 1 tsp, leveled vegetable broth, granulated, organic
- 125 g sheep’s cheese
- 1 pinch(s) pepper, mixed, freshly ground
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Own creation, for 1 hungry person, as a main course
Wash and dry the parsley. Then finely chop it. Dice the feta cheese. Mix together a marinade of oil and vinegar, ground beef, and mixed pepper. Peel and dice the shallots. Wash and dry the tomatoes, halve them, remove the stems, and cut into large cubes. Peel the cucumber, cut it in half lengthwise, scoop out the insides with a teaspoon, and discard. Halve the two halves again lengthwise and cut into thick strips. Place everything in a bowl. Add the marinade, feta cheese, and Kalamata olives, and fold everything in. Sprinkle with the freshly chopped parsley. Vegans can fry tofu or smoked tofu instead of feta cheese and fold it in.
