Ingredients for 4 servings:
- 1 pack of spaghetti
- 1 pack of feta cheese
- 2 balls of mozzarella
- 1 bowl of cherry tomatoes
- 2 cloves garlic
- 9 tbsp olive oil
- 3 tbsp balsamic vinegar, dark
- 15 basil leaves
- ½ zucchini, grated
- 1 handful of pine nuts
- salt and pepper
- herb(s)
- e.g. sugar or sweetener
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
veggie, simple, incredibly delicious
Cook the pasta until al dente. Meanwhile, chop or dice all the other ingredients and place them in a large baking dish. Grate the zucchini and add it to the dish. I then season with herbs, salt, pepper, and, if desired, a little sugar/sweetener. Roast the pine nuts in a pan (without fat!) until golden brown and add them as well. Then add the pasta to the baking dish and mix well. Cover and place in the oven at 180 degrees Celsius (350 degrees Fahrenheit) for 30 minutes, covered with aluminum foil.
