Ingredients for 2 servings:
- 2 m.-large kohlrabi
- 1 large carrot(s)
- 1 large onion(s), very finely chopped
- 1 garlic clove(s), finely chopped or pressed
- 1 tsp vegetable broth, granulated
- 2 eggs
- 3 tbsp oat flakes, fine
- salt and pepper
- curry powder
- Paprika powder
- Parsley or other herbs of your choice
- e.g. mineral water or milk
- 1 tbsp oil

Coarsely grate the kohlrabi and carrots, then mix with the onions, garlic, spices, eggs, herbs, and oats. Let it swell briefly. If the mixture is too dry, add a little mineral water or milk. Pour it into a pan with hot oil and fry slowly. Slowly, as the vegetable rösti tends to overcook. It’s worth the wait! 5 people per person.
