Indian spicy zucchini

Ingredients for 2 servings:

  • 2 small zucchini, each about 250 g
  • 100 g onion(s), chopped
  • 1 large tomato(s), diced
  • 1 tsp cumin, whole
  • 2 tsp cumin powder
  • ½ tsp pepper
  • 3 cm ginger, peeled and grated
  • e.g. chili flakes or fresh chili peppers
  • 2 tbsp oil
  • n. B. Coriander greens, chopped

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Vegetable side dish

Quarter the zucchini lengthwise and then cut into approximately 3/4 cm thick slices. Heat the oil and briefly toast the cumin seeds. Add the onions and sauté for 5 minutes, until they begin to color. Add the diced tomatoes, ginger, cumin powder, chili flakes, and pepper and sauté for 2-3 minutes. Add the zucchini and sauté for about 8 minutes. Stir in coriander, if desired, or serve sprinkled with coriander.
