Ingredients for 3 servings:

  • 1 rabbit
  • 3 tbsp olive oil
  • 2 onions
  • 4 garlic cloves
  • 1 tbsp ginger, optional
  • 1 stalk(s) leek
  • 250 ml coconut milk
  • 4 tbsp soy sauce
  • some salt and pepper
  • 1 tbsp curry powder
  • 250 g mango(s), cut into pieces, fresh or from a jar
  • 1 cup of crème fraîche, 200 g

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 35 minutes; Total time approx. 2 hours 5 minutes

First, cut the rabbit into pieces. Then, brown it on all sides in a roasting pan with olive oil. Peel and chop the onions and garlic, and optionally add the ginger. Cut the leek into strips, wash, and shake dry. Add it and sauté everything. Deglaze with coconut milk. Add the soy sauce, salt, pepper, onions, garlic, ginger, and curry powder, and simmer for 1 hour. Then add the mango and simmer for another 20 minutes. Finally, add the crème fraîche. This goes well with rice, but croquettes are also good.
