Ingredients for 1 servings:

  • 225 g butter
  • 225 g brown sugar
  • 4 eggs
  • 285 g flour
  • ½ pack of baking powder
  • ½ tsp ground cinnamon
  • ½ tsp clove(s), ground
  • ½ tsp coriander, ground
  • ½ tsp cardamom, ground
  • 450 g raisins
  • 60 g candied orange peel
  • 60 g candied lemon
  • 110 g almonds, chopped
  • 4 tbsp beer (Guinness)
  • 8 tbsp beer (Guinness)

Working time approx. 20 minutes; Rest period approx. 7 days; Total time approx. 7 days 20 minutes

Guinness Cake

Cream the butter and brown sugar until fluffy. Gradually add the eggs and the flour mixed with the baking powder. Add the spices, raisins, candied orange/lemon peel, almonds, and 4 tablespoons of Guinness beer. Pour the batter into a greased loaf pan and bake at 170°C (electric oven or gas mark 3) for 1 hour, then at 150°C (electric oven or gas mark 1-2) for a further 90 minutes. Allow the cake to cool and pierce the top 4-5 times with a skewer or similar. Drizzle the cake with the 8 tablespoons of Guinness beer. Wrap the cake in aluminum foil and let it sit for a week. Enjoy the rest of the bottle of Guinness.
