If fat or marinade drips onto the embers, so-called polycyclic aromatic hydrocarbons (PAHs) form in the rising smoke, which can have a carcinogenic effect.

How unhealthy is burnt food?
When food is roasted or heated to high temperatures in closed containers, a substance called furan is produced. It has been shown to cause cancer in animals. How it affects people is not yet clear. The World Health Organization (WHO) therefore advises consuming such products only in moderation.
