Ingredients for 4 servings:

  • 2 tbsp olive oil
  • 1 small onion(s)
  • 2 garlic cloves
  • 2 tsp thyme, fresh
  • 150 ml red wine
  • 800 g tomatoes, chopped (can)
  • 1 pinch(s) of sugar
  • 50 g black olives (pitted)
  • 50 g green olives (pitted)
  • 2 tbsp capers
  • 2 tbsp basil, fresh
  • salt and pepper
  • 4 cod fillets
  • 150g mozzarella

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 45 minutes

Mediterranean fish for a warm summer evening

Finely chop the onion and garlic. Rinse and chop the capers. Heat the olive oil and sauté the onions, but do not let them brown. Add the garlic and thyme and sauté for about a minute. Increase the heat slightly and add the wine, simmering until thickened. Now add the tomatoes and sugar and bring to a boil. Cover and simmer for about 30 minutes. Then simmer uncovered for another 30 minutes, until the sauce has thickened. Stir in the olives, capers, and basil, and season to taste. Preheat the oven to 200°C (400°F). Place the fish in an ovenproof dish and pour the sauce over it. Bake for 15-20 minutes, until the fish is cooked through. Remove the dish from the oven and top with mozzarella slices. Leave the dish in the oven for another 5-10 minutes, until the cheese has melted. Serve with fresh buttered noodles or crispy baguette, along with a crisp salad. Tip: Instead of cod, you can use any other white fish.
