Italian mashed potatoes

Ingredients for 4 servings:

  • 1 kg potatoes, mainly waxy
  • 1 bunch arugula
  • 1 sour apple (e.g. Boskop)
  • 5 tbsp butter
  • 100g Gorgonzola
  • Salt and freshly ground pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Peel and quarter the potatoes, and cook in plenty of boiling salted water for 20-25 minutes. In the meantime, wash and roughly chop the arugula. Wash, peel, core, and finely dice the apple. Melt 2 tablespoons of butter in a pan. Sauté the apple cubes until translucent, then add the arugula and let it wilt. Season the mixture with salt and pepper. Drain the potatoes, let them steam briefly, and mash with the remaining butter. Roughly chop the Gorgonzola and fold in. Mix in the apple and arugula mixture and season to taste with salt and pepper. Serve drizzled with a little olive oil, if desired.
