Instructions
Working time approx. 20 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 1 hour; Total time approx. 5 hours 20 minutes
black sesame, dark chocolate and a base with white chocolate
For the base, slowly and carefully melt the butter and white chocolate, mix in the almonds and flour, and let cool. Beat the egg yolks with the sugar until frothy, then mix everything together well with a pinch of salt. Carefully line a loaf pan (no more than 20 cm long and 10 cm wide) with baking paper to ensure there are no gaps. Pour the liquid batter into the pan and bake at 160°C for 12-15 minutes. Check with a skewer whether the batter is baked through, then remove from the oven and let cool. During this time, make the sesame layer. To do this, slowly melt the sesame seeds and butter. Remove the pan from the heat, stir in the sugar and eggs, then mix in the flour and baking powder. Carefully lift the base out of the pan, leaving the baking paper in place, and pour in the sesame mixture. Bake at 180°C for 35 minutes, then check again with a skewer, remove from the oven, and let cool again. Now lift this part out of the tin, remove the baking paper, and first place the base back into the tin. Place the sesame seed base on top, press it down, and let it cool completely. Melt the dark chocolate in the cream, mix in the butter, let it cool slightly so the mixture thickens, and spread it evenly and thickly over the top of the cake. Then chill the tin in the refrigerator for at least 2 hours. To serve, loosen all edges with a knife and lift the cake out so that it doesn’t break. Cut into rectangles and serve with a scoop of matcha ice cream, another exotic ice cream flavor, or on its own.
