The recipe for Joppie sauce

In the Netherlands, this sauce is often eaten with fries and other hearty dishes. Try the sauce with sweet potato fries or as a dip with chips.

  • Ingredients: For the sauce, you need 200g mayonnaise, 1 small onion, 2-3 tsp curry powder, 2 tsp mustard, 2 tsp sugar, 1 pinch of tomato paste, salt, and pepper, and a small dash of white vinegar.
  • Preparation: Chop the onion as finely as possible and then fry it in a pan until slightly translucent.
  • Let the onions cool down.
  • Then mix all the ingredients and stir well. In the end, taste the sauce and add salt and pepper to taste.

On the history of the sauce

The sauce got its name from its inventor: Janyne de Jager, whose nickname was Joppie.

  • She developed the sauce at Annie’s Snackbar in Glanerbrug. There, Joppie originally used creamy fresh mayonnaise, fresh onions, spices, and carefully selected herbs for the basic recipe.
  • The sauce manufacturer Elite B.V. tried to copy the recipe. It succeeded and turned out just as good as the original recipe. The Achterhoek family business later bought Janyne de Jager the recipe.
  • Since 2002, Joppie has been on almost every menu in the Netherlands.
