Julie's Tomato and Mushroom Lasagna

Ingredients for 3 servings:

  • 1 onion(s)
  • 3 cloves garlic
  • 2 m.-large tomato(s)
  • 150 g mushrooms, fresh
  • 700 ml tomatoes, chopped or pureed
  • 100 g ready-made mix for vegetable or soy patties (alternatively 150 g minced meat)
  • 3 tbsp olive oil
  • 1 tsp, heaped salt
  • 3 tsp, heaped pizza seasoning
  • lots of black pepper, freshly ground
  • 2 tbsp margarine
  • 150 g tomato paste
  • 100 ml water
  • 2 tbsp cream or Cremefine
  • 1 pinch(s) of sugar
  • salt and pepper
  • some basil, fresh
  • 12 lasagna sheets
  • 150 g cheese (Emmental), grated

with veggie Bolognese, also available with minced meat

For Sauce No. 1: Mix the dry mix for vegetable patties with a little water and let it swell. In the meantime, peel the onion and garlic, clean the mushrooms, wash and deseed the tomatoes, and chop everything finely. Heat the olive oil and sauté the onion and garlic. Add the mushrooms, patty mixture, and fresh tomatoes, stirring constantly. Deglaze with chopped or passata and season generously with salt, pepper, and pizza seasoning. For Sauce No. 2: Melt the margarine in a small saucepan. Carefully stir in the tomato paste until no more liquid margarine is visible. Add the water and cream and mix well over low heat. Season to taste with salt, pepper, sugar, and basil. Now stir 2/3 of Sauce No. 2 into Sauce No. 1, taste again, and adjust the seasoning if necessary. In a baking dish, alternate layers of sauce and lasagna sheets, starting with the sauce and finishing with the remaining third of Sauce No. 2. Sprinkle with cheese and bake in a preheated oven at approximately 170°C (convection oven) for 30 minutes. Instead of Emmental, you can also use Parmesan cheese, which creates a delicious crust during baking. Instead of mushrooms, you can also use zucchini. If the lasagna is made with minced meat, it’s recommended to use a little more seasoning, as the dry mix for vegetable or soy patties is already seasoned. If you don’t have pizza seasoning, use a mixture of dried oregano, basil, and thyme.
