Mashed potatoes with a twist
Mix the mashed potatoes with milk, egg yolk, flour, and fried onions until smooth. Season with salt and nutmeg. Fry the bacon cubes and mix them with the potato dough. Roll the potato dough into a log on a floured surface and cut into 10-12 slices. Fry the potatoes in a non-stick pan in hot oil until golden brown. This takes about 4 minutes on each side. Served with a salad, this makes a quick meal; otherwise, it’s a side dish to a roast with gravy. In this case, I omit the bacon cubes and onions from the potato dough.
