Kale Quiche

Ingredients for 1 servings:

  • 200 g flour
  • ½ bag(s) of dry yeast
  • 125 ml milk or water, lukewarm
  • 1 tbsp oil or margarine
  • ½ tsp salt
  • 1 jar kale, e.g. Oldenburg style, well drained
  • 5 onions
  • Oil, for frying
  • 125 g lean ham, diced
  • 250 g sour cream or similar
  • 2 eggs
  • salt and pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

with yeast dough, for 4 pieces

Place the flour in a bowl and mix with salt and dry yeast. Add the oil and lukewarm milk and knead into the flour. Mix everything with the dough hook until the yeast dough pulls away from the bottom of the bowl. Cover the dough with a cloth and let it rise for 30 minutes. Meanwhile, peel and dice the onions. Fry the onions until golden brown, remove the pan from the heat, and fold in the well-drained kale and diced ham. Prepare a springform pan, either grease it or line it with baking paper. Roll out the yeast dough accordingly and place it in the pan, pressing the edges up slightly. Whisk together the eggs and sour cream. Season with salt and pepper. Pour the kale and onion mixture onto the yeast dough and drizzle with the egg white mixture on top. Bake the kale cake in a preheated oven at 200°C (top/bottom heat) for about 35-40 minutes.
